I am really happy to see my sister in the kitchen. My blog has inspired her to make her twist in Scalloped Potatoes. There are different ways to use potatoes and this dish is one example. It is a delicious dish you can make for family gatherings or on Sunday. Just ONE BITE, will make you want more. Check out the youtube video below. Note: Thinly sliced the potatoes so that when it is baking it will be easier to cook as opposed to if it is thick it will take longer to cook in the oven and burnt food isn't delicious. Be careful and happy cooking!!! Variations: After the layers, you can add ham, spinach, chicken, veggie anything you enjoy other than cheese which my sister added. I have prepared my way of making Baked Creole Chicken with Char Siu Sauce for all my meat lovers. It is one of my twist in baking chicken. (MY Recipe) 2 packs of chicken (leave it whole) 1 1/2 FLour 3 tbsp garlic powder 2 tbsp ginger powder 2 tbsp onion powder 3 tbsp five spice powder 1/2 tsp Soya Sauce 1/4 Sesame Oil 1/3 cup Oyster Sauce 2/3 cup Char Siu Sauce 1/3 Ketchup 1 tbsp Vegetable Oil/Olive Oil 1tbsp fresh chives Preparation After cleaning meat use flour to wash the meat and leave for 3 mins. Then combine the herbs and spices together in a bowl. Mix the dry ingredients with the chicken. Add in the wet ingredients such as the soya sauce, sesame oil, ketchup, oyster and char siu sauce. Drizzle the oil in a baking dish then arrange chicken neatly and spacious Baked for 360 degrees or 390 depending on the oven (1 hr). I use 390 because I wanted a rich golden brown chicken. Variations: You can add Prego/ Tomatoes sauce and add the cheese just like what my uncle did. He also dice and cook the eggplant adding the Parmesan, Prego sauce and seasonings. I have learnt there are variety of ways to make a dish with eggplant. Never be afraid to make your own style of cooking eggplant.
