Brief History
In the Caribbean, we use a variety of different ingredients that came from other cultures such as Spanish, Dutch, French, East Indians, Africans, British just to name a few brought their own culinary style to the Caribbean. However, have you ever wonder where ingredients and food came into the Caribbean?
It all started in the colonial days when these European countries started when they saw the potential in the Caribbean to trade. They wanted to take control of the Caribbean because they saw that it had grown tropical fruits, vegetables and seasonings that their country could not had grown. Then other "..Immigrant food cultures from other parts of the world mixed with remnant indigenous elements and were added onto and synthesized with European customs. (Houston, 2005). For example Africans, East Indians, Chinese just to name a few came into the Caribbean and bought their style. Therefore, the dishes in the Caribbean which are showcased, have the most colourful creative names and their are the Caribbean dishes which are reflects on the heritage.
I defined ingredients to be the basic foundation of food substances infused together to create a dish. In other words, what makes food is the ingredients grown from the ground. It all started with agriculture.

Herbs and Spices: Two Main Ingredients use in the Caribbean Food
While some may argue Garlic is not herb, Garlic is a herb because it started of as a leafy plant then it grows as round cloves. It does have an aromatic scent but at the same time, a leafy part can grow out of it. For example, it is amazing to garlic sprouts can grow out of the garlic glove. It is similar to a chive.
My definition of Herbs and Spices
Herbs are a leafy plant grown in the earth and used as main ingredient for seasonings. Some herbs flower while other do not. Herbs can all be in dry form as well. Examples of Herbs are French and Spanish thymes, Basil, Chadon Beni, Chives (Green Onion).
Spices are the aromatic dry aspect of plants used as the main ingredient for food. In other words certain part of a plant would be used for as Spice. For instance, roots and stem. While Alfraro, a culninary art expert stated it is "used for seasoning and flavoring a recipe, but not used as the main ingredient," I analyse most spices to be a main ingredient. For example, Chinese main ingredient is five spice power, East Indians in the Caribbean use Curry and Turmeric as their main ingredient.
The Caribbean has a lot of rich spices influence all over the world. Examples: Cloves,Curry Power, Cinnamon, Five Spice Powder, Black Pepper, Hot peppers, Pimentos, Ginger are just a few uses in the Caribbean.
