When we were children we craved and experienced many dishes, meals, especially sweets. For example, lollipop, candies, fried chicken, cake, chips, macaroni pie just to name a few. The sweet mouth we sometimes may get in trouble if we decide to eat only that first rather the food our parents put on the table. Sapodilla Brown is one of those who craved for sweets, desserts and food in her childhood years.
"My Childhood Memories" blog by Sapodilla Brown has bought back a lot of memories for me when I was a child especially cooking in the kitchen. I collaborated with her because her blog brings back the inner child in me. When I asked her what was her Childhood dishes, meals and sweets, I heard the spark in her voice bringing back those wonderful days of food. It varies from muffins, pineapple upside down cake, preserved mangoes and provision and smoke herring.
I decided to keep it within the Caribbean and make the Provision and Smoke Herring. This recipe many Caribbean lovers enjoy to make especially in Trinidad and Tobago. I prepared this meal by making sure I have all my ingredients first. Then I chopped all my seasonings, clean the provision such as Dasheen, Eddoes, Sweet Potatoes and Plantains. I bought the boneless smoke herring which I find is easier to clean rather than the whole herring. This took time but at the end the meal was well done.
There are many ways of making Provision and Smoke Herring in the Caribbean. Some people would add finely chopped hot peppers while others may not. This is my way of making the meal: Provision and Smoke Herring. I dedicate this meal to Sapodilla Brown which is one of her childhood memory dish.
